A Gin Born from Passion and Precision

The creation of Classic Dry Gin  was guided by a clear goal: to craft a timeless London Dry-style gin that honours tradition while offering a clean, contemporary character. As with all spirits from The Shropshire Distillery, it’s made using the one-shot method in copper stills — a slow, deliberate process that ensures each botanical is treated with the care it deserves.

Unlike multi-shot distilling, where concentrated botanical extract is diluted with raw alcohol, the one-shot approach captures all the flavour in a single run with nothing added but purified water. It’s more labour-intensive, yields less, and takes longer — but the result is a gin with integrity, balance, and depth. A True Craft!

Why "Classic Dry Gin"?

The name “Classic Dry Gin ” is a nod to both tradition and a spirit of exploration. Inspired by the chemistry of distilling and a love for clean, refined spirits, the gin represents a balance of science and art. It’s a name that’s slightly playful, a little mysterious — and perfectly suited to a gin that redefines what a London Dry can be.

Our Dry Gin reflects the distillery’s mission to produce spirits that are both recognisable and unique — a tribute to traditional techniques, infused with a distinctly Shropshire flair.

The Taste Profile

Best known for its smooth, crisp and dry style with a velvety finish. Expect an immediate brightness on the nose — citrus peel and piney juniper — followed by a warming complexity on the palate. Warm citrus and floral notes round out a remarkably smooth finish.

Nose: Zesty orange & grapefruit peel, juniper, a hint of spice

Palate: Juniper-forward with citrus, cassia, and gentle florals

Finish: Smooth, dry, with a lingering lift of botanicals

Crafted with Care

Every element of our Dry Gin  is thoughtfully considered — from the carefully sourced botanicals to the hand-labelled packaging. All production is carried out at the distillery in Ellesmere, Shropshire, near Shrewsbury, where attention to detail and a love for craft spirits underpin every process.

Working closely with UK and worldwide suppliers, the distillery selects premium ingredients such as angelica root, cassia bark, coriander seed, and orris root. These botanicals are chosen for their ability to complement the core juniper profile and create a harmonious spirit.

The Role of Copper: Jean & Anne

Distillation takes place in two beautiful copper pot stills — Jean and Anne — who are central to the character of the spirits. Copper plays a crucial role in refining flavour and removing unwanted compounds. The shape and size of these stills are tailored to coax out the clean, complex qualities that define our Dry Gin .
